Welcome Dani Manilla to our Cooking Class instructors!
Dani Manilla has always been a culinary nomad. After graduating from University of Michigan, a career in the airline industry allowed her to pursue her training at La Varenne and the Cordon Bleu in Paris, Marcella Hazan’s Cooking School in Bologna, Tante Marie’s Cooking School, and with Executive Pastry Chef of the Stanford Court Hotel, Jim Dodge, in San Francisco. Further travels allowed her to explore other cuisines of Europe, South and Central America, Africa, and Asia and to take culinary classes in Mexico, Bali, Shanghai, Capetown, Lima, and Morocco.
Dani acknowledges that she has had a life long love affair with food. She says,”Food has been my most constant friend, my consuming passion, the scrapbook of my memories and my gateway to understanding the multitude of cultures that compose our world. My personal motto has been a quote from the great French chef/naturalist, P. Roumeguère, ‘One can choose not to eat. One cannot accept to eat poorly.’ My mother always told me that most people eat to live, but that I lived to eat. It took me almost thirty years to realize what a gift that was.”
Dani opened her first company, Memorable Catering, in Los Angeles and began teaching cooking classes at the local cookware store “The Silver Skillet”. After moving to San Francisco, she expanded to open Dani Manilla Catering and Cooking Classes where she enjoyed a successful 18 year career as both a caterer and cooking instructor.
She has been featured in Bon Appètite Magazine and had recipes published in numerous cooking publications.
In 2003 Dani moved to the south of France where she co-hosted a high end destination get-a way on a 66 acre agricultural property. Desiring to share the beauty and natural resources that this region has to offer, Dani began conducting a series of week long seminars for international clients seeking to experience “The Pleasures of Provence”. Thus, again she found herself pursuing her love of imparting knowledge about food and culture to her dedicated students. “It is important to understand both the techniques and ingredients that we can assimilate from other cultures, to be cognizant of the importance of preserving traditional and regional recipes, but also to develop a way to integrate this food into our daily cooking.”
In 2010 Dani decided to move back to the United States to be closer to her family. On an impromptu visit to Charleston she fell in love with the beauty, history, and culture of the Holy City. Since arriving here she has enjoyed doing restaurant consulting, recipe development, teaching and lecturing.
Dani is currently working on publishing her memoirs of food and cultures that she has loved. She and her husband now share their time between Charleston and the south of France.
