			<content:encoded><![CDATA[<p>Although our warm spring and record temps here in Charleston make it seem like summer had arrived weeks ago, we have just passed the official first day of summer, and with that we thought it would be appropriate to make a post about great, refreshing wines for summer sipping!</p>
<p>Even some of our hardcore red wine fans will admit that a nice light white wine is a nice complement to a hot day. </p>
<p>What makes whites so ideal for the summer? White wines have higher tartaric acid than red wines which gives us the perception of crispness. And, generally we chill our white wines so they cool us down faster than a room temp Cabernet or Syrah. Be careful though! There is a tendency to over-chill white wines which mute the aroma in the nose and their flavors. We recommend taking your white wines out of the refrigerator 15 to 20 minutes before serving so the taste and aromas have the chance to open up.</p>
<p>Other factors that make white wines more popular in the summer include their generally lower alcohol content and the fact that we tend to eat lighter food in the summer, making pairing with a lighter wine more appropriate.</p>
<p>If you want to strike a balance between the red and white drinkers at your summertime patio party, consider a nice Rose&#8217;. These pink wines are made from red wine grapes, but the juice is separated from the skins quickly after crushing. Because so much of the heavy flavors of big, bold reds come from the skins, rose&#8217; wines are often, lighter and fruitier than their red cousins. This makes them great candidates to serve chilled and provide a flavorful, refreshing option.</p>
<p>So beat the heat this summer with a refreshing Sauvignon Blanc or flavorful Rose&#8217;!</p>

			<content:encoded><![CDATA[<p>As we get closer to our nation&#8217;s birthday on July 4th, I thought I would post some wine facts about some of our early statesmen. It seems like the Founder&#8217;s had quite a taste for wine and celebration!</p>
<p>Thomas Jefferson was known as a connoisseur of fine wines, especially fine Bordeaux and Madeira, but few know how committed he was to his wine! In 1801, his salary was $25,000 &#8211; certainly a great sum for the day! He did, however, make sure that he was well stocked with wine, spending $3,000 that year on wine purchases! Jefferson also had task of ensuring that the wine cellars of the first 5 Presidents were well stocked.</p>
<p>Not to be outdone, upon the ratification of the US Constitution, the Founders put together a party that featured a bill for 54 bottles of Madeira, 60 bottles of claret, 8 bottles of whiskey, 22 bottles of port, 8 bottles of hard cider, 12 beers and seven bowls of alcohol punch large enough that &#8220;ducks could swim in them&#8221;. </p>
<p>This must have been one serious celebration for the 55 drafters of the document! Of course, how often does one get to celebrate something of that historical importance! I wonder if an 18% gratuity was added since the group was larger than 8?</p>
<p>(Yes&#8230; we know it is the Declaration of Independence that is celebrated on July 4th, but we couldn&#8217;t find a breakdown of that evening&#8217;s festivities. Since it was war time, it may be classified!)</p>
<p>So enjoy a glass of wine this 4th of July! You can be sure it is what the Founders would have wanted!</p>
